Ingredients

  • 1 yellow onion

  • 1 pound ground turkey

  • 2 tablespoons taco seasoning

  • 1 pinch red pepper flakes

  • 1 can (3.5 oz) green chilies

  • 1 bag tortilla chips

  • 1 can (15 oz) black beans

  • 1 can (15 oz) corn

  • 1 bell pepper

  • 2 to 3 cups shredded Mexican cheese blend

  • Olive oil

  • Salt, pepper

Preparation

  1. Preheat the oven to 375°F.

  2. Peel and dice the yellow onion. Heat a drizzle of olive oil in a skillet over medium heat and add the onion. Cook for 3 to 4 minutes until the onion is soft and translucent.

  3. Add the ground turkey to the skillet with the onion. Season with salt, pepper, taco seasoning, red pepper flakes, and the green chilies. Break up the turkey with a spatula and stir everything together. Cook for about 8-10 minutes, until the meat is fully cooked and no longer pink.

  4. Drain and rinse the black beans and corn. Dice the bell pepper it into small pieces. In a bowl, combine the black beans, corn, and chopped bell pepper.

  5. Line a large baking sheet with parchment paper or foil. Spread out a layer of tortilla chips. Spoon a layer of the black bean, corn, and pepper mixture over the chips. Add a layer of the seasoned turkey mixture, then sprinkle with shredded cheese.

  6. Repeat with another layer of chips, followed by the veggie mixture, turkey, and more cheese, continuing until you’ve used up all the ingredients.

  7. Place the baking sheet in the oven and bake for 5 to 8 minutes, or until the cheese is melted and everything is hot.

  8. Serve warm straight from the pan, optionally topped with your favorite extras like sour cream, avocado, salsa, or fresh cilantro.
