Crispy roasted sweet potato fries, golden pan-fried halloumi, and fresh cucumber come together in this hearty vegetarian wrap. Drizzled with sweet chili sauce and lightly pan-fried until golden, these burritos are the perfect balance of savory, sweet, and fresh.

Ingredients

  • 1 large sweet potato

  • Garlic powder

  • 2 blocks halloumi cheese

  • 1 cucumber, thinly sliced

  • Iceberg lettuce, shredded

  • Sweet chili sauce

  • Large burrito-sized flour tortillas

Preparation

  1. Preheat the oven to 450°F. Slice the sweet potato into long fry-shaped strips. Toss with olive oil, salt, pepper, and garlic powder. Spread evenly on a baking sheet and roast for 30 minutes, until crispy.

  2. In the last few minutes of the sweet potato cooking, slice the halloumi into strips. Heat a large non-stick pan over medium heat and cook the halloumi for a few minutes, until just golden and slightly melty. Remove from the pan.

  3. Lay out a tortilla. Layer on sliced cucumber, shredded lettuce, a few pieces of halloumi, roasted sweet potato fries, and a drizzle of sweet chili sauce. Roll up tightly into a burrito.

  4. Place the burrito seam-side down in a skillet and pan-fry on both sides until golden brown.

  5. Serve warm.
