Recipe Description

This sheet pan roasted veggie medley is bursting with flavor and spice. Perfectly seasoned potatoes, peppers, zucchini, and onions roast together until golden and crisp, making an easy, comforting dish that works as a hearty side or a light main.

Ingredients

  • 1 bell pepper

  • 1 yellow onion

  • 1 zucchini

  • 4 medium red potatoes

  • 1 Kielbasa

  • 2 tablespoons Tony’s seasoning

  • 1 tablespoon paprika

  • 1 tablespoon Italian seasoning

  • Salt and pepper

  • Olive oil

  • Fresh parsley

Preparation


  1. Preheat the oven to 450°F

  2. Chop the bell pepper, onion, zucchini, potatoes, and Kielbasa into bite-sized pieces. Spread them evenly across the baking sheet.

  3. Sprinkle the vegetables/sausage with salt, pepper, Tony’s seasoning, paprika, and Italian seasoning. Drizzle generously with olive oil.

  4. Mix everything together with your hands or a spatula until the vegetables are evenly coated.

  5. Place the baking sheet in the oven and roast for 35 minutes, stirring halfway through to ensure even cooking.

  6. In the last 4–5 minutes, switch the oven to broil and keep a close eye on the vegetables. Let them crisp slightly, but remove quickly if they begin to burn.

  7. Top with freshly chopped parsley before serving.
