Recipe Description
This vibrant one-pot meal brings together tender cod, fluffy couscous, and a medley of vegetables in a fragrant red Thai curry broth. With warm spices, fresh herbs, and a bright squeeze of lemon, it’s a flavorful and comforting dinner ready in under 30 minutes.

Ingredients
1 whole bell pepper
1 floret broccoli
1 teaspoon ground cumin
1 teaspoon paprika
5 ounces frozen spinach
2 cloves garlic
2 tablespoons red Thai curry paste
1 cup low-sodium chicken broth
1 cup water
1 cup couscous
2 lbs of cod fillets
1 whole lemon
Fresh cilantro
Preparation
Chop the bell pepper into small pieces. Cut the broccoli into bite-sized florets. Place the vegetables in a bowl and season with the cumin, paprika, salt, and black pepper.
Heat a drizzle of olive oil in a large skillet or sauté pan with sides over medium heat. Add the bell pepper and broccoli to the pan along with the frozen spinach. Cook for 4 to 5 minutes, stirring occasionally, until the vegetables are bright in color and beginning to soften.
Peel and mince the garlic, then add it to the pan. Cook for about 1 minute, stirring, until fragrant.
Stir in the red Thai curry paste, coating the vegetables thoroughly. Pour in the chicken broth and water, and bring the mixture to a boil.
Once boiling, add the couscous and stir to combine. Place the cod fillets gently into the pan, then cover with a lid. Cook for 5 to 8 minutes, depending on the thickness of the fish, until the cod is opaque and flakes easily with a fork.
Squeeze fresh lemon juice over the dish and sprinkle with chopped cilantro before serving.
