Ingredients

  • 1 whole bell pepper

  • 1 floret broccoli

  • 1 teaspoon ground cumin

  • 1 teaspoon paprika

  • 5 ounces frozen spinach

  • 2 cloves garlic

  • 2 tablespoons red Thai curry paste

  • 1 cup low-sodium chicken broth

  • 1 cup water

  • 1 cup couscous

  • 2 lbs of cod fillets

  • 1 whole lemon

  • Fresh cilantro

Preparation

  1. Chop the bell pepper into small pieces. Cut the broccoli into bite-sized florets. Place the vegetables in a bowl and season with the cumin, paprika, salt, and black pepper.

  2. Heat a drizzle of olive oil in a large skillet or sauté pan with sides over medium heat. Add the bell pepper and broccoli to the pan along with the frozen spinach. Cook for 4 to 5 minutes, stirring occasionally, until the vegetables are bright in color and beginning to soften.

  3. Peel and mince the garlic, then add it to the pan. Cook for about 1 minute, stirring, until fragrant.
