Ingredients
1 orange bell pepper
1 broccoli floret
1 pint cherry tomatoes
1 red onion
1 cup frozen corn
1 lb store-bought pizza dough
Olive oil
1/2 cup pesto
Red pepper flakes, to taste
1 tablespoon Italian seasoning
2 cups shredded mozzarella cheese
Preparation
Preheat the oven to 450°F.
Chop the bell pepper, broccoli, and red onion into small bite-sized pieces. Slice the cherry tomatoes in half. Set out the frozen corn to thaw slightly if needed.
Drizzle a bit of olive oil onto a large baking sheet. Press and stretch the pizza dough onto the sheet, working it to the edges. This might take a few minutes of kneading and pressing.
Spread the pesto evenly across the surface of the dough. Sprinkle red pepper flakes to your taste, then add the Italian seasoning.
Sprinkle the shredded mozzarella evenly across the top.
Arrange the vegetables in rows by color on top of the cheese—use as much or as little of each as you’d like, based on your preferences or what you have available.
Drizzle a little more olive oil over the top and sprinkle with a pinch more Italian seasoning.
Bake for 12 minutes, or until the crust is golden and the cheese is melted and bubbly.
