Ingredients

  • 4 links plant-based sausage

  • 1 zucchini

  • 1 bell pepper

  • 1 teaspoon garlic powder

  • 1 tablespoon Tony’s seasoning

  • 2 cups whole wheat orzo

  • ½ cup dry white wine

  • 2½ cups vegetable stock

  • ½ cup frozen corn

  • Feta cheese, for topping

  • Fresh basil

  • Olive oil

  • Salt, pepper

Preparation

  1. Cut the plant-based sausage into bite-sized pieces.

  2. Heat a large skillet over medium-high heat and drizzle in the olive oil. Once the oil is hot, add the sausage and let it brown for 2–3 minutes, stirring occasionally.

  3. While the sausage cooks, slice the zucchini into half-moons and chop the bell pepper into bite-sized pieces.

  4. Once the sausage is browned, add the zucchini and bell pepper to the skillet. Season with salt, black pepper, garlic powder, and Tony’s seasoning. Stir to combine and cook for about 4 minutes, until the vegetables begin to soften.

  5. Add the orzo to the skillet and mix everything together well.

  6. Pour in the white wine and vegetable stock, stir again, and bring the mixture to a boil.

  7. Let it boil uncovered for 8–10 minutes, stirring occasionally to prevent sticking, until the orzo is tender and most of the liquid has absorbed.

  8. With a few minutes left in the cooking time, stir in the frozen corn and let it heat through.

  9. When everything is cooked and creamy, turn off the heat and top with crumbled feta and torn fresh basil before serving.
