Recipe Description
Golden, crispy gnocchi roasted with tender zucchini, sweet red onion, and burst cherry tomatoes—all on one pan for easy cleanup. Finished with creamy burrata and fresh basil, this cozy, crowd-pleasing dinner is packed with flavor and comes together with minimal effort.

Ingredients
2 pounds potato gnocchi
1 zucchini
1 red onion
1 pint cherry tomatoes
2 cloves garlic
¾ cup olive oil
1 tablespoon Italian seasoning
Pinch red pepper flakes
Salt, pepper
Burrata cheese, for serving
Fresh basil
Preparation
Heat the oven to 425 degrees Fahrenheit. Line a large baking sheet with parchment paper.
Slice the zucchini into half-moons and the red onion into thin wedges. Spread the gnocchi, zucchini, and onion across the baking sheet.
Grate the garlic into a small bowl. Add the olive oil, Italian seasoning, red pepper flakes, and a generous pinch each of salt and pepper. Whisk to combine.
Pour the dressing over the gnocchi mixture and toss everything directly on the baking sheet until evenly coated.
Place the pan in the oven and roast for 10 minutes.
While it bakes, slice the cherry tomatoes in half.
After 10 minutes, remove the pan from the oven, add the halved tomatoes, and stir everything together.
Return the pan to the oven and roast for 20 more minutes, until the gnocchi is crispy and golden.
Remove from the oven and top with torn pieces of burrata and fresh basil before serving.
