Recipe Description
These quick and hearty lentil sloppy joes are a flavorful vegetarian twist on the classic. With a tangy, smoky sauce and melty cheddar cheese on toasted whole wheat buns, they come together in just 15 minutes for an easy weeknight dinner.
Ingredients
Olive oil
1 yellow onion
1 red onion
1 can (8 ounces) tomato sauce
½ cup ketchup
2 tablespoons tomato paste
1½ tablespoons Worcestershire sauce
1 teaspoon maple syrup
1 teaspoon apple cider vinegar
Salt
Black pepper
2 cans (15 ounces each) pre-cooked lentils
Whole wheat buns (6-8)
Butter
Cheddar cheese (for topping)

Preparation
Heat a large skillet over medium heat and add a drizzle of olive oil.
Dice the yellow onion and red onion, then add them to the skillet. Cook for 3–4 minutes, until translucent.
Add the tomato sauce, ketchup, tomato paste, Worcestershire sauce, maple syrup, apple cider vinegar, salt, and pepper. Stir and let cook for 1–2 minutes.
Meanwhile, butter the insides of the whole wheat buns and toast until golden and crispy.
Drain the lentils and add them to the skillet. Stir and cook for a few minutes until thickened.
Spoon the lentil mixture onto the toasted buns, sprinkle with cheddar cheese, and serve hot with a side salad.
