Harissa Butter Beans with Goat Cheese

Recipe Description
These creamy harissa butter beans are rich, comforting, and just a little spicy, with tangy goat cheese stirred right into the sauce. Served over toasted French bread, it’s the kind of cozy, flavor-packed dinner that feels fancy but is secretly so easy.

Ingredients
French bread (enough for 4 servings; 1 large loaf or 2 small loaves)
2 tbsp unsalted butter
1 yellow onion
1 jar roasted red peppers
2 garlic cloves
1 (15 oz) can diced tomatoes
½ cup water
Pinch of red pepper flakes
¼ cup harissa sauce
1 (15 oz) can butter beans
½ cup milk (any kind)
4 oz goat cheese
Fresh parsley
Salt & pepper
Preparation
Preheat the oven to 375°F (190°C).
Slice the French bread lengthwise, butter the cut sides, and set aside.
Dice the onion, roughly chop the roasted red peppers, and finely chop the garlic.
Heat 1½ tbsp of butter in a large pan over medium heat.
Add the diced onion and cook for 3–4 minutes, until translucent.
Add the garlic and cook for about 30 seconds, just until fragrant.
Stir in the chopped roasted red peppers, diced tomatoes (with their juices), water, salt, pepper, red pepper flakes, and harissa.
Bring to a strong simmer.
Place the buttered French bread in the oven for 10 minutes.
Let the sauce cook uncovered for 4–6 minutes until slightly thickened.
Stir in the butter beans and milk.
Crumble in half the goat cheese and stir until melted.
Cook for another 4–5 minutes to let flavors meld and sauce thicken further.
Top with fresh parsley and extra crumbled goat cheese.
To serve either spread the butter beans over the cut bread like an open-face sandwich; or you can choose to dip the bread directly in the sauce!
