Recipe Description

This cozy, flavor-packed noodle soup combines tender rice noodles, sweet baby corn, and peas in a savory soy-garlic broth, topped with pan-steamed dumplings for a comforting and satisfying meal.

Ingredients

  • 1 red bell pepper

  • 2 cloves garlic

  • ½ cup low-sodium soy sauce

  • 3 cups vegetable broth

  • 1 cup water

  • 10 frozen dumplings

  • 1 (15-ounce) can baby corn

  • 6 ounces Thai rice noodles

  • ½ cup frozen peas

  • Sesame seeds, for garnish

Preparation

  1. Heat a little olive oil in a large pot. Chop the red bell pepper and cook in the oil for 1–2 minutes, just until warmed. Mince the garlic and add to the pot, cooking for 1 more minute.

  2. Pour in the soy sauce, vegetable broth, and water. Bring to a boil.

  3. In a separate pan, heat a little olive oil. Add the frozen dumplings and two tablespoons of water. Cover with a lid, reduce heat to low, and steam until cooked through.

  4. Once the broth is boiling, add the baby corn and rice noodles. Cook for about 4 minutes. In the last 2 minutes, stir in the frozen peas.

  5. Divide the soup into bowls, top with dumplings, and sprinkle with sesame seeds. Serve hot.
