Recipe Description

This quick chicken stir-fry with rice is a weeknight favorite! Juicy chicken, colorful stir-fry veggies, and a savory-sweet soy-hoisin sauce come together in one pan, topped with a fried egg for extra richness.

Ingredients

  • 3 cups rice

  • 3 cups water

  • 2–3 chicken breasts, cut into very small pieces

  • 1 bag frozen stir-fry vegetables

  • ½ cup soy sauce

  • 2 tablespoons hoisin sauce

  • 1 tablespoon rice vinegar

  • 1 teaspoon fish sauce

  • 1-inch piece fresh ginger, grated

  • 1 garlic clove, grated

  • Eggs (1 per serving, optional topping)

Preparation

  1. Bring 3 cups of rice and 3 cups of water to a boil in a saucepan. Once boiling, cover with a lid, reduce the heat to low, and cook for 15 minutes. Remove from heat and fluff with a fork.

  2. While the rice is cooking, heat a large pan with a drizzle of oil. Add the chicken, season with salt and pepper, and cook for 2–3 minutes.

  3. Add the bag of frozen stir-fry vegetables to the pan and continue cooking until the vegetables are hot and tender, about 8 minutes.

  4. Meanwhile, in a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, fish sauce, grated ginger, and grated garlic.

  5. When the vegetables are done, add the cooked rice, chicken, and sauce into the pan. Stir everything together until evenly coated.

  6. In the same pan (after removing the stir-fry or pushing it to the side), fry eggs to your liking.

  7. Serve the stir-fry in bowls, topped with a fried egg.
