Recipe Description
These rotisserie chicken quesadillas are melty, golden, and packed with sweet caramelized onions and shredded chicken. A quick weeknight meal that feels extra comforting, perfect with your favorite dipping sauces on the side.

Ingredients
1 yellow onion, sliced into long strips
¼ cup white wine
1 rotisserie chicken, shredded into fine pieces
Large flour tortillas (burrito-sized)
Shredded Mexican cheese blend

Preparation
Slice the onion into long strips. Heat a large skillet over medium heat with a drizzle of olive oil, salt, and pepper. Cook until the onion begins to soften and turn translucent.
While the onion cooks, shred the rotisserie chicken into fine pieces. If needed, add it to the skillet with the onions to warm through.
After a few minutes, pour in ¼ cup of white wine. Let the onions continue to cook, stirring occasionally, until caramelized—about 8 minutes total. Remove the onion-chicken mixture from the pan and set aside in a bowl.
To make the quesadilla, place one large tortilla in the same skillet. Sprinkle with shredded Mexican cheese, then add some of the onion-chicken mixture on top.
Cover with a lid and let cook open-faced for about 45 seconds, until the cheese begins to melt. Fold the tortilla in half and cook on both sides until golden brown.
Remove from the pan and repeat with the remaining tortillas and filling.
Serve with a side salad
