Cheesy Chicken Tater Tot Casserole

Recipe Description
This savory tater tot casserole layers caramelized onions, seasoned ground chicken, vegetables, and herbs under a rich, cheesy sauce. Topped with Gruyere, cheddar, and a golden crown of crispy tots, it’s comfort food with a flavorful twist.

Ingredients
1 yellow onion
1 cup low sodium chicken broth (divided)
1 pound ground chicken
2 bell peppers
½ cup fresh parsley
1 tablespoon fresh thyme
3 cloves garlic
1 teaspoon cayenne or chili powder
½ cup frozen peas
2 tablespoons flour
¼ cup soy sauce
1 tablespoon Worcestershire sauce
2 cups shredded Mozzarella cheese
Frozen tater tots (enough for one layer)
1 cup shredded cheddar cheese
Preparation
Chop the onion and heat an oven-safe pan with a drizzle of olive oil. Cook for 3 to 4 minutes, until softened.
Slowly pour in ½ cup of chicken broth and increase the heat to high. Cook with the onions for about 15 minutes, stirring occasionally, until deeply caramelized.
Add the ground chicken to the pan along with the chopped bell peppers, chopped parsley, thyme, minced garlic, cayenne or chili powder, salt, pepper, and frozen peas. Cook, breaking the chicken into small pieces, until browned.
Sprinkle the flour over the mixture and stir until well incorporated. Pour in the remaining ½ cup of chicken broth, soy sauce, and Worcestershire sauce. Stir and bring to a boil. Cook for about 5 minutes, until the sauce thickens.
Turn off the heat. Sprinkle mozzarella cheese evenly over the top. Arrange the tater tots in a single layer on top of the cheese.
Bake in a 400°F oven for 20 minutes.
Remove from the oven and sprinkle cheddar cheese over the tater tots. Return to the oven for another 10 to 15 minutes, until the cheese is melted and golden brown.
Serve warm.
