Recipe Description

Fresh tomatoes, creamy mozzarella, fragrant basil, and a smear of pesto come together in these simple Caprese sandwiches — a quick and delicious 15-minute dinner that tastes like summer in every bite.

Ingredients

  • Sourdough sandwich bread slices

  • 2 heirloom tomatoes

  • 8oz mozzarella

  • Basil

  • Balsamic vinegar

  • 1/4 cup pesto

  • Side salad

Preparation

  1. Spread pesto on each side of bread and butter on the other side.

  2. Heat a large skillet over medium heat and put a little bit of olive oil in the pan.

  3. Sear butter-side-down and layer with sliced heirloom tomatoes, mozzarella, basil with a sprinkle of balsamic vinegar on top. Place the next slice of bread pesto-side-down on top of the sandwich.

  4. Fry in the pan until each side is golden brown.

  5. Serve with a side salad.
