This cozy baked tuna noodle casserole is a hearty, cheesy, and comforting dinner that comes together with simple pantry staples. Perfect for busy weeknights, it’s creamy, loaded with veggies, and finished with a golden breadcrumb topping.

Ingredients

  • 1 pound whole wheat egg noodles

  • 8 ounces baby bella mushrooms

  • 2 cans tuna

  • 1 can cream of mushroom soup

  • 1 cup frozen peas

  • 2 cups cheddar cheese

  • 1 tomato

  • 1 cup breadcrumbs

Preparation

  1. Start by bringing a large pot of water to a boil and preheating the oven to 425°F.

  2. Add the whole wheat egg noodles to the boiling water and cook until tender.

  3. While the noodles cook, chop the baby bella mushrooms into small pieces and place them into a 9 by 13 inch baking dish.

  4. Add the tuna, cream of mushroom soup, and frozen peas to the baking dish.

  5. When the noodles are finished cooking, drain them well and add them to the baking dish.

  6. Stir everything together with the cheddar cheese until evenly combined.

  7. Slice the tomato and layer the slices on top, then sprinkle the breadcrumbs evenly over the casserole.

  8. Place the baking dish in the oven and bake for 15–20 minutes, until the cheese is bubbly and the top is golden.
