Skewer Up Some Summer

There’s something about the Fourth of July that feels like summer at its best! Sunshine, a cool drink in hand, and the sound of something sizzling on the grill. For me, it’s more than just a holiday; it’s a chance to escape to my family’s lake house and spend a few slow, laughter-filled days with the people I love most. Whether we’re out on the water, playing games in the yard, or just watching fireworks from the dock, it’s one of the few weekends each year where time seems to stretch a little longer.

Of course, no holiday weekend is complete without good food. And while I love a classic barbecue spread, I’m always looking for dishes that are both easy and balanced. That’s why I came up with these skewers. They’re packed with colorful summer vegetables and lean protein, and they come together without the fuss of marinating or complicated prep. Just thread everything on the skewers, sprinkle with a bold, smoky dry rub, and they’re ready for the grill.

The dry rub is really the game-changer here. It saves fridge space (a must when you’re cooking for a crowd at the lake!) and eliminates the need to plan ahead. Still, it brings serious flavor! It forms a beautiful crust on the chicken while letting the natural sweetness of the vegetables shine through. Every bite feels satisfying but light, which is exactly what I want when I’m spending the day in a swimsuit or heading back out for more boating after lunch.

Beyond the ease and flavor, I also love how customizable these skewers are. You can use whatever vegetables you have on hand—zucchini, bell peppers, onions, cherry tomatoes, mushrooms. They’re naturally gluten-free, dairy-free, and packed with nutrients, which means everyone at the table (even those with dietary restrictions) can enjoy them without compromise.

Whether you’re hosting a backyard barbecue, contributing to a potluck, or just feeding your family on a holiday weekend, these skewers are a perfect fit for the Fourth of July. They look festive, taste amazing, and make cleanup a breeze.

Happy Fourth, and happy grilling!
