Dad-Approved Dinner: Sunday Roast

Father’s Day is one of those holidays that hits a little differently for everyone—and that’s what makes it so special. It’s a day to celebrate all the dads and dad figures in our lives: the goofy ones with the unmatched sock collections, the dads-to-be excited (and maybe a little nervous), the dads we’ve loved and lost, the ones who stepped up when we needed them most, and even the people who hope to be dads one day. No matter where you’re at in the journey, I hope this weekend feels full of love and family.
Personally, I always think about my dad’s humor, he’s the king of dad jokes (whether you asked for one or not). He’s also my go-to call for any and all DIY advice. I recently went to fix one tiny thing in my new house and ended up calling him six times in two hours. He didn’t even flinch, he just laughed and helped me through every step. And of course, no Father’s Day would be complete without roasting him for watching documentaries about dirt. Yes, dirt. And yes, he fell asleep halfway through.
This Sunday Summer Roast Chicken is my favorite kind of Father’s Day meal - easy, cozy, and crowd-pleasing. It’s perfect for family gatherings because it feeds a lot of people, and it’s one of those dishes that feels a little special without being fussy. The baby potatoes and summer veggies (like zucchini and summer squash) make it colorful and bright, and the roast chicken itself turns out golden and flavorful every time. It gives “I spent all day cooking” energy, but secretly it’s incredibly low effort. Plus, it’s a much healthier take on the traditional “meat and potatoes” vibe that so many dads love. You can feel good serving this one... and even better enjoying it with the people you love!
